Berry Good Vanilla Jelly
BLUEBERRY LAYER
INGREDIENTS
1/2 cup thawed blueberries
1 1/4 cup water
1 1/2 Tbsp gelatin
2 tsp vanilla essence
1 Tbsp your choice sweetener, or stevia drops to taste (roughly 10 drops)
method
1. Combine a 1/4 cup of water and the gelatin and set aside.
2. Blend all of the remaining ingredients (blueberries, sweetener, vanilla, water) on high until the blueberries are as fine as you can get them, set aside.
3. In a low heated saucepan, melt down the gelatin mix with just a little dash of the blueberry mix, continually stirring until the gelatin has completely dissolved. Remove from the heat, and combine all of the ingredients. We are not heating it all so we can keep the nutrients in tact in the berries.
4. In a tray lined with baking paper (I use an average loaf tin), pour the mix in and while you do the following layers, set in the fridge for roughly an hour, or the freezer for roughly 20 to 30 minutes or until completely firm but not frozen!
Vanilla LAYER
INGREDIENTS
3/4 cup coconut cream
1 Tbsp cacao butter, ghee or coconut oil (I love cacao butter)
1/4 cup water
1 1/2 Tbsp gelatin
2 tsp vanilla essence
1 Tbsp your choice sweetener, or stevia drops to taste (roughly 10 drops)
method
1. Combine a 1/4 cup of water and the gelatin and set aside.
3. In a low heated saucepan add all remaining ingredients along with the gelatin mix (coconut cream, cacao butter, sweetener, vanilla, water) and gently stir until well combined and gelatin has completely dissolved. Set aside to cool slightly.
4. Once blueberry layer has set and the coconut vanilla mix has cooled slightly (so it doesn't melt the blueberry layer) pour the mix over the top and while you do the last layer, set in the fridge for roughly an hour, or the freezer for roughly 20 to 30 minutes or until completely firm but not frozen!
Raspberry LAYER
INGREDIENTS
1/2 cup thawed raspberries
1 1/4 cup water
1 1/2 Tbsp gelatin
2 tsp vanilla essence
1 Tbsp your choice sweetener, or stevia drops to taste (roughly 10 drops)
method
1. Combine a 1/4 cup of water and the gelatin and set aside.
2. Blend all of the remaining ingredients (raspberries, sweetener, vanilla, water) on high until the raspberries are as fine as you can get them, and then strain through a strainer and set aside.
3. In a low heated saucepan, melt down the gelatin mix with just a little dash of the raspberry mix, continually stirring until the gelatin has completely dissolved. Remove from the heat, and combine all of the ingredients. We are not heating it all so we can keep the nutrients in tact in in the berries.
4. Once cooled slightly (so it doesn't melt the layer underneath) pour the mix over the vanilla layer and set in the fridge for roughly an hour, or the freezer for roughly 20 to 30 minutes or until completely firm but not frozen!
