Gut Loving Zucchini Pancakes
The actual best in almost every way possible, and I’m convinced that I’ll brainwash you to think the same ? I’ve made these nearly daily for a couple of years now and will likely continue to for eternity. The actual best for me, for little humans, medium humans, almost all tastebuds, our gut health, for sneaky veg intake, a handy on the go snack, a complete breakfast, lunch, dinner or even a midnight snack if you’re into that. Have I made it clear that they are handy + yum + extremely versatile.
GUT LOVING ZUCCHINI PANCAKES
INGREDIENTS //
3/4 cup cassava flour (I use the brand AKN Organics)
5 pastured eggs
2 spring onions
2 cloves of garlic
200g zucchini
A big handful of fresh coriander and/or basil
1 tsp baking soda
Salt and pepper to taste
1 tbsp unflavoured broth concentrate
Plenty of fat to cook with; olive oil, coconut oil, ghee or alike.
METHOD //
Place all ingredients in your food processor or blender, and blitz just until combined but not puréed. We much prefer them when the veggies still have a little more to them rather than being completely smooth. Heat up your preferred pan, lather it in your chosen fat, and spoon out enough for a little pancake. Cook, flip, set aside and continue. Keep adding more fat to the pan so they are crispy. ENJOY!
