Mango Macadamia Delight

When most food right now forms divine abstract art on the floor, roof or wall except for the smoothie, we will continue to make the smoothie. Here is an extremely easy, delicious, fabulously immune boosting smoothie that makes me feel like a mediocre Mum once he has had it and continues to ask for more. I also realise it’s good for me too, so have a few guzzles if there are some leftovers.

MANGO MACADAMIA DELIGHT
INGREDIENTS
*1/2 a medium zucchini
*2 handfuls of spinach
*2 tablespoons of collagen powder
*1 cup chopped frozen mango (option to ferment first for 24 hours in coconut water kefir, strained and frozen if your little one or you can’t have too much sugar)
*1/4 cup coconut water kefir OR water
*1 handful of macadamia nuts
*Sneaky optional but recommended dose of either; the Mothers Blend, camu camu for natural vitamin C (also in Mothers Blend), chlorella for detox and micronutrients, or for an extra extra big dose of vitamin C in times of current sickness - liposomal vitamin C. The Mothers Blend will turn the smoothie pink if you add it in, but we had already had our dose!
*If you’re not too worried how ginger will be tolerated regarding its taste, I highly recommend adding a small knob of ginger for its antiviral benefits.
